Steakhouse Classics with a Creative Twist

Randolph is preparing to welcome a new culinary destination: Oak & Iron, a project led by Nate Aldrich and his partner, Katie Hanscom. Located on Merchant’s Row, this restaurant promises an elevated yet rustic dining experience and a genuine connection to the community. And the timing couldn't be better.

A Dream Takes Root in Randolph

The journey to open Oak & Iron began three years ago when Nate and Katie decided to turn their long-standing dream into reality. "We've been looking at things for about three years, talking about this and wanting to do something like this," Katie shared. Their search for the perfect location led them to Randolph. "We drove down into town and were like, wow, this town's really cute, and it's got a good vibe."

Taking the Risk

Nate referred to the decision to start a new restaurant as a risk worth taking, quoting Wayne Gretzky, “You miss 100% of the shots you don’t take.” This mindset has driven them to pursue their dream with passion and determination.

The couple's venture is a stellar demonstration of how community spirit can help bring dreams to life. From the start, they received overwhelming support from local residents and business owners. "Everybody we've talked to has been so supportive and willing to help," Katie said. Gene Bianco, their landlord, played a crucial role by stepping up to help with the infrastructure, and local electrical contractors Rick and Jesse Ernst and plumber Richard Skarrow lent their expertise to bring the space up to code. Nate emphasized, "It's been awesome the past couple of months, getting to know those guys and their great work."

What's on the Menu

Oak & Iron's menu is inspired by steakhouse classics mixed with fun, creative twists. It will include a variety of steaks, such as filet mignon and Delmonico, half chicken, duck, and risotto dishes. For those seeking lighter fare, the menu will feature vegetarian options and seasonal soups and salads. 

Nate and Katie are particularly excited about their new chef, Todd Cassell, who brings a wealth of experience and creativity to Oak & Iron. "Todd has been with us from the beginning of [the] menu creation journey. His expertise in crafting unique dishes and his passion for using local ingredients have been invaluable," Nate shared. He added, "Todd's approach to food aligns perfectly with our vision for Oak & Iron. We're thrilled to have him lead our kitchen."

Oak & Iron plans to serve lunch and dinner. Lunch will focus on sandwiches, salads, and soups. "We're going to open for lunch five days a week, Tuesday through Saturday," Nate explained. Dinner service will highlight signature steaks and entrées, with weekly specials to keep the offerings fresh and exciting.

True to its name, Oak & Iron will strongly emphasize whiskey and wine. "We're focusing on the classics," Nate said. The restaurant will boast a selection of 8 to 10 cocktails and a curated list of wines and beers, primarily featuring local Vermont brews. "We'll have four, possibly six beers on tap, local Vermont beers," Nate added.

Nate and Katie's meticulous planning and community-focused approach have laid a strong foundation for Oak & Iron's success. They have invested significantly in the restaurant's infrastructure and are committed to providing excellent service and quality food. "We believe in what we're doing and working hard to make it happen," Nate said confidently. By fostering relationships with local farms and utilizing the Vermont Fresh Network, they plan to source the best local ingredients, ensuring an authentic "farm to fork" experience.

Welcome to Randolph! 

As the community eagerly anticipates the opening of Oak & Iron, it's clear that this new establishment will be more than just a place to dine. It will be a community hub of sorts where locals and visitors can enjoy delicious food, warm hospitality, and a sense of belonging. "We couldn't have done any of this without the support of our family and friends," Nate said, reflecting on their journey. "We're excited to invite everyone in and share what we've created."
